Soak Tanks

Advantages of owning one’s own soak tank include the reduction of ongoing cleaning costs, eliminating labour time in scrubbing baking trays, pots, pans, etc. and a water saving when compared to continuous hand-washing. Importantly, owning a soak tank allows the freedom to clean as and when required, maintaining a healthy kitchen environment for all.
Typical cleaning frequency varies from kitchen to kitchen, but is typically once per month.

Filter Cleaning Powder
To ensure the efficient operation of a commercial kitchen’s exhaust system, it is imperative the grease filters are cleaned regularly and thoroughly. Proper cleaning reduces the risk of fire, increases the longevity of outside exhaust fans and ductwork, reduces unwanted odours and ensures kitchens are compliant with the relevant Australian health and safety regulations. Comco’s filter cleaning powder is suitable for cleaning rangehood and grease filters, baking pans, skewers, utensils and other similar cooking equipment.
By combining Comco’s cleaning powder solution with the Comco soak tanks, the cleaning process is easy to self manage and can provide savings in filter exchange fees and reduces the labour required to manually scrub grease from pots, trays and pans.
How to use Comco’s Soak Tanks and Filter Cleaning Powder
- Safety rubber gloves and safety glasses must be worn at all times when operating the tanks.
- Fill the tank with water up to approx. 15 cm down from the top of the tank. Do not overfill the tank.
- Add 1 cup of filter cleaning powder for the small tank or 1.5 cups if using the large tank. This may vary depending on the amount of grease accumulated on the items.
- Carefully stir the solution through the water before adding the items to be cleaned.
- Add the items to be cleaned, ensuring they are completely submerged underwater.
- Plug in the soak tank and switch it on. Set the temperature to 75°C and close the lid. The water should be at a high temperature but not boiling. The recommended cleaning time is 4 hours for most products; however, many commercial kitchens will leave the tank on overnight. This will vary from kitchen to kitchen, and is dependent on grease build-up.
- Lift the lid and remove the cleaned items. Heat resistant gloves should be worn when handling items immediately after cleaning. A simple rinse should be all that’s required to complete the cleaning process.
Items made from stainless steel (baffle filters or stainless steel honeycomb filters) can be put through a commercial dishwasher as a final rinse before reinstalling. - To release the dirty water, connect the extension hose provided to the drain pipe and open the drain valve. Dirty water should be discharged in the relevant drains or grease traps as per council requirements.
